Featured Recipe: Cucumber Salad

During my recent travels to Costa Rica, I was served wonderful, simple summer dish. This is a refreshing dish that will not cause any guilt when you've put so much effort into getting a beach body. It's something like a cucumber salad. I wasn't given a name for it when it was served to me so I'm taking suggestions.

Ingredients:
1 cucumber
Salt
Lemon
Sugar
Water

Directions:
Rinse and peel the cucumber. Slice the cucumber in 1/4 inch slices. Place them in a bowl that has a fitting lid. Just barely cover the cucumbers in cool water. Then squeeze the lemon juice into the bowl. A 30-second stint in the microwave will make the lemon juice a lot easier to get to. Add equal parts salt and sugar. Two tablespoons of each will work perfectly. Cover the bowl with the lid and give it a gentle shake to mix all the ingredients. Essentially, the water mixture becomes a marinade for the cucumbers and flavors them just right.

The dish is best served chilled. Whether served alone or as a side dish for a full plate, is completely up to you. Buen Provecho!
